		<description>Our go-to dinners when things get tough are:
1) Breakfast for dinner. Nothing wrong with a bowl of cereal (better yet, oatmeal) with milk and some fruit on the side; or eggs, or french toast (which is basically eggs with toast anyway).
2) Quesadillas, which are always easy to fortify if you&#039;ve got a can of beans in the pantry.
3) Pasta &amp; peas. It&#039;s easy to find good quality frozen peas, and if you toss them in with the pasta just as it finishes cooking, the peas will be perfectly cooked in the time it takes to drain &amp; serve. If you do this with orzo and stir in lots of freshly grated cheese, you can almost dream you&#039;re eating risotto. This works nicely with edamame, too, which you can get frozen &amp; shelled at TJ&#039;s (it just needs to cook a minute or two with the pasta).</description>
